Eva van Zijl (Head of Finance and Legal), a thoroughbred foodie who loves these Dutch Meatballs. This recipe is originally from the restaurant Librije, which is a top notch restaurant in Amsterdam. We are happy that Eva has this secret recipe and shares it with us!
INGREDIENTS
• 400g minced beef
• 300 ml beef stock
• 2 small eggs
• 80g breadcrumbs
• 2 tbsp coarse mustard
• 2 tbsp soy sauce ketjap manis
• 1 tablespoon of salt
• 1 tablespoon of cayenne pepper
• 50g butter
PREPARATION METHOD
1. Mix the minced meat with the spices, mustard, soy sauce, eggs and breadcrumbs.
2. If the mixture is a little too wet, add some extra breadcrumbs. The minced meat should feel a little sticky.
3. With wet hands, form meatballs from the mixture.
4. Than rest the balls in the fridge for half an hour.
5. Take a large frying pan and let the butter melt.
6. Roast the meatballs on either side until golden brown.
7. Add the beef stock and cook the meatballs under a sealed lid for about 45 minutes.
8. Librije's meatballs are best with a good lick of coarse mustard.
